I am not a mayonnaise person. I really can’t stand the smell or taste of it. The other night we had a potluck at church for our Bible study class, and Ms. Angie S. brought this Chicken Salad. It was delicious so I asked her for the recipe for our website.

If you love chicken salad, but don’t like mayonnaise, then you’re going to love this mayo-free chicken salad.
Chicken Salad
- 1 rotisserie chicken, skin removed and deboned
- 1/2 cup finely chopped pecans
- 1/2 green bell pepper
- 1/2 red bell pepper
- 1-2 ribs celery
- 3-4 tablespoons dill pickle relish
- 1/2 cup chicken broth, fat-free
- garlic salt
- pepper
Using knife blade in a food processor chop bell peppers, celery and pickle relish. Transfer to a mixing bowl. Chop pecans and add to peppers/celery/relish. Chop chicken and add to mixing bowl. Season with garlic salt and pepper. Add enough broth to get to desired consistency.
Serve with a side salad, or melba toast, wheat thins, or even a crunchy bread. It’s all delicious.
